Tips for preparing Halwa-style Sooji Ka Halwa at home (Recipe video inside)


Halwa is probably one of the oldest desserts in Indian cuisine! Generations of Indians have grown up enjoying various types of hawas for special occasions, religious festivals or simply as dessert. Sooji ka halwa is one of the most popular hawas enjoyed by Indian families. It is very easy to make and it is quite delicious. However, whenever we make it at home, we don’t find it as delicious as when we find sooji ka halwa prepared by halwai. It made us wonder what kind of magic a halwai did to make halwa taste so good. Thanks to YouTube food blogger ‘Cook With Parul’, we’ve found the Hawaiian secret and you can now make halwai-style sooji ka halwa at home.

Tips for making Sooji Ka Halwa in Halwai style:

The first step is to convert the regular, granular sooji to the smooth sooji. Good sooji are available in the market, however, you can also prepare scrumptious sooji at home. Just grind the granular sooji until it is as smooth as a powder.

The proportions of the ingredients and the steps are essential when preparing halwa-style sooji ka halwa. Ghee, sooji, sugar and water – are the main ingredients of sooji ka halwa. The ratio should be 1: 1: 3: 1, i.e. one cup of buttermilk, one cup of sooji, three cups of water, and one cup of sugar. Make sure you only use one standard cup to measure all ingredients.

Sooji Ka Halwa Recipe: How to Make Halwa-Style Sooji Halwa

  1. Start by heating the ghee in a kadhai. Once the ghee is hot, add the sooji. Only add sooji while the ghee is hot for the best color and texture. Roast until color changes.
  2. Add a spoonful of besan or atta, whatever you have in the kitchen. This will help bind the halwa. Continue stirring and frying the sooji.
  3. Meanwhile, boil water, buttermilk, cardamom powder, and kesar until it exudes color.
  4. Add dried fruits to the sooji, and fry them. Turn off the fire.
  5. Pour boiling kesar water into the sooji and start stirring. After the water is completely absorbed, turn on the flame
  6. Add the sugar and continue mixing until it is completely dissolved.
  7. Sooji ka halwa is ready!
