Recently, nutritionist Pooja Makhija shared a video where she explains that day-old rice is better than fresh rice and her tip is sure to surprise you.

The nutritionist took to Instagram to share about the low GI rice. At the beginning of the video, she says that one day old cooked plain rice is better than hot freshly cooked rice. Furthermore, she explains that numerous studies have demonstrated that refrigeration of cooked starch causes a process known as starch degradation, which turns easily digestible starches into resistant starch. In a nutshell, when one cooks high-starch food like rice or potatoes and let it cool, it converts the digestible starch into resistant starch. Digestible starch is something our bodies break down and our blood sugar goes up.

Meanwhile, resistant starch is not broken down. She also adds that this starch is not bad for you because it is probiotic. This doesn’t spike blood sugar and is good for the gut!

Put the minced garlic in a medium heat oil pan. Cook until golden brown. Add a teaspoon of hot chili pepper, ginger, and green onion. Fry for one minute. Add a broken egg to the pan. Mix the mixture while cooking. Then, add in the leftover rice and gently stir to combine everything. Pour soy sauce over rice after combining with salt and black pepper powder. Put the fried rice with green onions in a bowl.
