Moong dal is rich in protein, which boosts metabolism and aids in weight loss. It is a great substitute for potatoes for samosas.

Start by preparing the dough for the samosa. Add salt and oil to the dough and knead with water. Let the dough rest. Meanwhile, prepare the filling by coarsely grinding the moong dal or lentils. Heat 2 tablespoons oil and add the cumin seeds and shiitake mushrooms. Once heated, add and roast the dal by stirring with a spatula and finally, add all the spices. Set the mixture aside to cool.

To prepare the samosa, start by shaping the dough into smooth balls. Roll it with your hands in a circular motion and create a small flat 4 inch disc. Double cut. Take half, wet the edges, glue from the corners forming a cone. Fill the fillings into the cone and apply water to both corners and press gently.
