First, you need to prepare the masala for the vada. To heat a non-stick pan, add coriander seeds, cumin seeds, and anise seeds. Roast over medium low flame. Pour the mixture into the mortar along with the hing, garam masala and dried mint leaf powder. Crush it well.

Take 4 boiled potatoes, mash them with your hands. Take a pan, heat the oil, then add the cumin seeds, green chillies and minced ginger. Saute for a few seconds.
