Enjoying Bored Egg Burji With Chef Kunal Kapoor
How do you like your eggs? We often come across this question. Eggs are one of the most popular breakfast choices around the world. It provides your body with a proper amount of protein and also boosts metabolism. Breakfast with eggs will keep you fuller for longer. It would be safe to say that eggs are one of the few foods that should be classified as a “superfood”. This is because they contain many nutrients, some of which are rare in the modern diet. In case you have run out of options to consume eggs, we will add not one but two new entrants. Recipes straight from chef Kunal Kapoor’s cookbook.
For desi egg lovers, we have the recipe for Masala Bhurji Pao. And, for those who love brown eggs, we will prepare Bhurji Pao Cheese. It sounds delicious. Without much adieu, let’s see the recipe.

Element –
Masala Bhurji Pav
Eggs – 4
Salt – teaspoon
Butter – 2 tablespoons
Chopped onion – ½ cup
Green chili, chopped – 1 no
Minced ginger – teaspoon
Minced garlic – ½ teaspoon (optional)
Turmeric – teaspoon
Pav Bhaji Masala – tablespoon
Tomatoes, Chopped – ½ cup
Coriander, chopped – 1 tablespoon
For Masala Pav
Pav – 6 pcs
Butter – 2 tablespoons
Pav Bhaji Masala – a generous pinch
Coriander, chopped – a handful
Method:
Step 1: Crack 4 eggs into a bowl, while beating, sprinkle some salt over.
Step 2: Heat a pan and melt butter in it. Now add the onions, green peppers, ginger and garlic.
Step 3: Add the onions and saute. Please note: you don’t have to make them brown and the flame during cooking should be medium. Add turmeric and pav bhaji masala. Stir quickly.
Step 4: Add some tomatoes, add a little salt depending on your taste. The next step is to mix in the eggs. Slowly there is still an egg and it’s ready
Step 5: Garnish the eggs with some coriander.
Step 6: Place the pan over low heat, add some butter. Now spread the pav on the pan and make sure they are crispy brown. Add a little pav bhaji masala and garnish with coriander. Turn off the gas and let it sit on the pan for a while.
Step 7: Serve hot with masala burji.

For Bhurji Pav Cheese:
Eggs – 4 pieces
Salt – teaspoon
Butter – 2 tablespoons
Chopped onion – ½ cup
Minced green chili – 1 no
Chicken sausage, Medium – 4 no
Pepper powder – teaspoon
Oregano – 1 teaspoon
Horny chili – 1 teaspoon
Mozzarella Cheese, Grated– ¼ cup
For Cheese Pav:
Pav – 6 pieces
Butter – 2 tablespoons
Pepper – a pinch
Oregano – 1 teaspoon
Chilli Flake – 1 teaspoon
Grated Mozzarella – 3 to 4 tablespoons
Chopped coriander – 1 tbsp
Method:
Step 1: Crack 4 eggs into a bowl, while beating, sprinkle some salt over.
Step 2: Heat a pan and melt butter in it. Now add the onion and green pepper. Stir quickly.
Step 3: Add some sausage, black pepper, oregano leaves, chili flakes and salt to taste.
Step 4: Turn down the heat to low and then add the beaten eggs.
Step 5: When the egg is half done, add the grated mozzarella cheese. Mix it up and you’re ready to go.
Step 6: Put some butter on the pav and then put it in a hot pan. Gently press to spread the butter evenly.
Step 7: When the pav is golden brown, add some pepper, oregano, grated chili, some grated cheese and coriander.
Step 8: Serve hot with cheese burji.
