Easy Taco Soup – A Beautiful Mess
Of course, there are a million different ways to make different types of banh tet. But imagine the most basic tortilla with spiced ground beef, onions, and some garlic. Plus, all the overlays – the most important part.
This easy taco soup is exactly in soup form. I’m a soup fanatic, so this one has all the flavors of easy homemade banh tet and all the comfort of soup.
As the name suggests, this taco soup is super easy to make. You can customize it in a number of different ways, especially through what you serve on top.
I love making homemade tortilla strips for this recipe (it’s worth the effort!), but if needed, you can swap this out for store-bought tortilla chips instead. Also, my toppings include grated cheese, sour cream, avocado, cilantro and a splash of hot sauce.
The taco soup is made with onions, garlic, ground beef, spices (see recipe card below), beans, diced tomatoes, and broth. It reminds me of a chili soup version.

To make homemade tortilla strips, simply pan-fry corn cake in a little olive oil over medium/high heat until edges begin to brown. I use a pizza cutter to quickly and easily cut tortillas into strips before frying.

Simple tomato taco soup with homemade tortilla strips

Tortilla Strips

For the soup, start by mincing the onion and garlic.

In a large pot, heat a tablespoon of olive oil over medium heat.

Add onion and cook for 1-2 minutes until starting to soften.

Add garlic and cook for one more minute.

Add the ground beef and break it into small pieces with a wooden spoon while it cooks. Season with taco seasoning.

Once the ground beef is cooked (no longer pink), add cans of drained beans and diced tomatoes to their juices. More stock is good. Cook for 10 minutes until everything is warmed.

Stir milk. Season to taste and add salt and pepper as needed.

While the soup is cooking, you can make tortilla strips. Do so by cutting the tortillas into strips (I use a pizza cutter for this) and frying in a little olive oil until crisp.

Serve soup with tortilla strips and other taco toppings.
