Kaju masala is quite common gravy in dhabas! Usually served with tandoori naan or butter kulcha, this masaledaar and creamy gravy just melts in the mouth. All you need are cashews, tomatoes, ginger-garlic powder and basic Indian seasoning and you can make this creamy sauce at home.

Kaju Masala Recipe: How to Make Dhaba-Style Kaju Masala Curry
First, you will need to prepare the ingredients. Sauté a cup of cashews in butter until they are golden and set aside. Saute bay leaves and tomatoes with butter. Once the tomatoes are mushy, remove the bay leaves and mash the tomatoes until smooth. Grind 18-20 cashews into a fine powder.
Next, fry the ginger-garlic mixture in butter until fragrant. Add the cashews and roast until the dough is golden brown. Add the tomato puree, paprika, water and green chillies. Let the curry cook for a while. Add the fried cashews and season with a little salt. Finish the gravy by adding garam masala, cream, and grated kasuri methi. Curry masala kaju is ready!
