Chicken and rice casserole – A Beautiful Mess


This chicken and rice casserole is one of those dinner recipes that is so easy to make, and at least at our homes, we can eat the rest for days. I love a long meal like that—it’s a real lifesaver for the current season I’m in. Lol.

I love making chicken and rice stew with broccoli, but you can skip it or even swap it out for something else like mushrooms.

I also like to make chicken and rice casserole without the canned soup. Nothing against soup versions! This is just how I want to make it.

You may have noticed that I like to recharge me with French fried onions! I know, it’s a little bit different. I feel like French fries aren’t getting enough love, because the main thing they’re known for is Thanksgiving. Green bean container.

I love the flavor and crunch they add to this dish, but if you want to trade them for a cup of shredded cheddar cheese instead (for a more traditional chicken and rice dish), be my guest.

Do you cook the rice before putting it in the casserole?

No, that’s one of the great things about this dish. Even though we’re doing it from scratch, it’s still basically a grilled risotto dish in which you add uncooked chicken AND uncooked rice to a casserole (with liquid) and grill it all together. Homely!

    braised chicken

  • ¼

    butter
  • 2
    chicken cubes
  • first
    teaspoon
    garlic powder

    Cayenne

    Italian seasoning
  • salt and pepper

    French fried onions
    or shredded cheddar cheese

  1. Cut chicken breast cubes (if frozen, defrost first).

  2. Chop broccoli if using.

  3. Butter a rectangular casserole dish. Add chicken, broccoli, and rice.

  4. In a large pot, mix the stock chicken, milk, butter, chicken balls, and other seasonings. Cook over medium heat and stir until everything is well combined.

  5. Place the saucepan on the baking tray. Pour the liquid over the rice and chicken mixture in the saucepan. Cover with aluminum foil.

  6. Bake at 350°F for 1 hour and 15 minutes. For the last 15 minutes, remove the foil and add French fries or cheese on top.
