The first dish I ever cooked in my air fryer was potato wedges, and since then, I’ve been searching for the ultimate air fryer potato wedge recipe – one that promises flavor, crust Crispy on the outside and soft and spongy in the middle.
Here’s Why Instagram and TikTok foodie Sheyna Patel’s potato wedges air fryer recipe (opens in a new tab) caught my interest when it appeared on my FYP. And with over 10.8 million views and 1.1 million likes (and counting), it seems I’m not alone.
The main difference between Sheyna’s formula and other formula best air fryer The potato wedge recipe I’ve tried before is using ice. Before you season and cook the seasonings, Sheyna recommends soaking them in ice cold water for 25-30 minutes.
I was skeptical at first about this seemingly unnecessary stretch; For me, potato wedges are the perfect “quick” snack or side dish to pair with. However, after experimenting with this recipe many times with different spices, I was truly converted.
Below, you’ll learn how to make Sheyna’s potato wedges at home.

Air fryer potato seasoning ingredients
The ingredients listed below make about 16 potato slices. If you use smaller or larger potatoes, the amount will obviously change and therefore the amount of seasoning may need to be adjusted.
The seasonings listed below can be changed for different options based on your taste. I made these seasonings using Cajun seasoning, as well as the Chinese Five Spices, with both alternatives working well.
It should be noted that I tried this recipe with cold as well as ice water and both gave similar results, so don’t worry if you don’t have ice cubes on hand.
- 2 medium white potatoes
- 3 tablespoons vegetable oil
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cornstarch
Method of seasoning potatoes with an air fryer
I’ve used Tower T17099 Vortx Eco two-basket air fryer (opens in a new tab), set at 350ºF (175°C) for 20 minutes. Wedges are rotated every 10 minutes to ensure they cook evenly.
Step 1: Cut each potato in half, then halve again, and then cut in half again to make 16 pieces.
Step 2: Place these wedges in a large bowl of ice cold water and soak for 25-30 minutes. The cold water helps remove starch from the potatoes, keeps the potatoes from swelling and sticking together, and gives the potatoes a crispy skin.
Step 3: Remove the wedges from the ice cold water and pat dry with a clean kitchen towel or tea towel.
Step 4: Place the seasonings in a dry bowl and add the seasoning, cornstarch, and vegetable oil. Cornmeal helps remove excess moisture during cooking to help you get a crispier coating.
Step 5: Use your hands or a spoon to ensure that each seasoning is coated with oil and seasoning as evenly as possible.
Step 6: Set the air fryer to 350°F (175°C), line the wedges a few centimeters apart in the air fryer’s basket, and set the timer for 10 minutes. Ideally, the wedges should be placed on the grill to help circulate air around them, although this is not necessary.
Step 7: After 10 minutes, open the air fryer and rotate the wedges. Set the timer for another 10 minutes. Opening the air fryer will lower the temperature, so if after 20 minutes your wedges aren’t as crispy as they should be, leave them on for a few more minutes.
Step 8: Once cooked, remove the seasonings and serve with your favorite dipping sauce, as an evening snack or as a side dish to your main meal.
Air fryer potato wedge judgment
I’ve tried many french fries, chips, and seasoning recipes in my air fryer, and while the results are always delicious, they’re rarely as crispy as I’d like them to be. So I was surprised by how crispy the fries cooked this way. Meanwhile, the inside of the wedge is still soft and spongy.
While the step of soaking the potatoes in ice adds a significant amount of time to the quick dish, it’s totally worth the extra crunch in my opinion.
